Teff is a cereal little known in our culinary culture, but it has been used in the African diet for over five thousand years. It is a small grain, and it has been shown that it was already cultivated by ancient civilizations and even used by the Egyptian pharaohs (Stallenecht, 1993). For more than two decades, this cereal has begun to re-emerge, and now all the advantages of this tiny seed are being discovered, both in the agronomic and nutritional fields.
